How about a really good burger?
Oat Tofu Burger:
Oats really lend themselves well to giving a meatless burger consistency.
You will need: (for about 10 burgers)
1 package tofu = 1 pound
½ cup steel cut oats - pour 2 cups boiling hot water over them and let sit until absorbed - about 1/2 hour
1 onion - minced
1 cup carrots - minced
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon soy sauce
1 egg (optional - vegans just omit or replace with a tablespoon wheat germ)
1 tsp oregano, marjoram, basil or a combination
2 tablespoons oil
1. Set up oats and meanwhile drain the tofu and crumble with your hands in a bowl - chop and add all other ingredients and shape into 10 burgers. For them to hold together well it helps to refrigerate them for half an hour especially if you don’t want to use the egg.
2. Brown your burgers in the oil and serve or store in the fridge for later. They are quite delicious eaten cold.

Oat / Tofu eh? My wife has been making a really good "burger" out of primarily bulgar... I'll have to email her this recipe and we'll give this one a try as well.
I tried to make these yesterday and they came out really...crumbly. I couldn't even cook one because it wouldn't stay together in the pan :(
I think I'll try again with a little less water in the oats.

So sorry - I almost feel like running over to your house with a plate full of burgers to make up for it - even though I don't where you live.
Sorry again - but evidently you are willing to try again - and that is where it's at - with veggie burgers - perseverance!
So - what went wrong? "Crumbly" sounds like not enough moisture and not "too much" like you said. Or generally said, more glue seems to be in order - fantastic "glues" that come to mind are: eggs - if you use them. Leftover brown rice - is quite sticky and holds everything together well. Flaxseeds, which you can grind up in a coffee grinder and mixed with a bit of water become quite gooey as well. Also a fantastic addition is "Vital Wheat Gluten" Arrowhead Mills makes an affordable one. Adding just a half a cup would make a huge difference in consistency - and all these "glues" add protein and fiber as well - so not a bad thing.
